I've been lucky enough to work in this beautiful resort now 19 years. In sanctuary we reopened in 2001 with Elements as the principal restaurant and Jade bar. Elements, the philosophy behind our restaurant is really just farm-fresh american fares with Asian style accents on the menu but every once in a while we can step out of our kind of our zone and bring a few different dishes in but philosophy has always let the ingredients speak for themselves.
The pork chop one of my favorite dish is really the sleeper on the menu in the restaurant and has become one of the kind of secret local favorite dishes. It is a double bone pork chop. It's a Snake River Farms product out of Idaho. Berkshire style pork, heavy fat content very lean in the inside but also extremely tender and and one of the keys I think to make this pork chop created the marinade we use on it is a got a honey hoison pie spice glaze and it just fits perfectly we marinate it I can actually infuse that flavor very very quickly. Need it and you don't have it there's a problem and that never happens with the Henkelman.
Char-broil it then roast in the slow oven then it's a little honey and it's served over KimChi style Brussels sprouts with bacon and a little shishito peppers and it's honestly it's a 16-ounce pork chop
You know timing is everything to a chef and how much time it takes to do this
that and the other and with the Henkleman you know when you can infuse and
marinate so quickly almost for the minute it gives you such an advantage you've got to be able to manage time here and I just want to be able to impart flavor fast and efficiently and this is the best way to
